1) Cut two grease papers to size baking pan, which is 8.5 to a 9 inch diameter baking pan. 2) Grease the baking pan, and lay the papers. Put aside. 3) This Jamaican style birthday cake recipe can be done two ways. a) After baking and cooled, lay icing all on one large cake. 4) b) Or, bake two smaller cake, lay icing in the middle and all over, making two layered cake. (Use 7 inch baking pan, then put half the dough in each pan. Bake for 30 to 35 minutes.
5) Sift the flour with the baking powder, and salt. Put aside. 6) Now, dice the room temperature butter, and add the sugar. Use a wooden spoon and cream together. 7) Next, beat the eggs with the vanilla, and add the coconut milk with a drop of white vinegar. (Using the white vinegar distort spoilage for one week). 8) Now add the egg mixture to the butter mixture. 9) Next, add the flour mixture to the creamed butter. 10) Use a mixer, or a wooden spoon to beat the dough well. 11) After that, pour the dough in the baking pan. 12) Lift and drop, two to six times to release the air bubbles.
